Olive Oil needs a minimum of 3 varieties of fruit to blend into a well balanced and longer life product. For instance a Bordeaux is based on Cabernet Sauvignon grape at 50%, Merlot at 30% and 1 other of several types in the area whereas a Chateauneuf Du Pape consists of 12 varieties.
In Olive Oil a similar order of blending applies based on the local variety and 2 other purely for oil. Our blends are based on Amphissa main variety + Koroneiki, Manaki, Arberquina and Kalamon varieties.
